I was curing my sweet potato harvest in the oven with the light on, but the oven was turned on and the potatoes were accidentally not removed until the oven reached 300 about ten minutes later. They were removed then and were mostly firm, but some of the thinner parts and parts of the surface are a slightly wrinkled and soft. Will the potatoes be still usable and can continue on the curing process as normal or should they be processed now?
