Keeping bunching onions going over winter in Zone 6

I planted Evergreen Bunching Onions in a grow bag Aug. 29, and they're thriving. I don't think they'll survive the winter here in urban Rhode Island (Zone 6b), although we have yet to have a frost yet this year. I'd like to have onions in the kitchen over the winter.


Should I pot them up and stick the pot under lights? Wash the bulbs and grow them in water under lights? What will work?
