I did black sink with my white quartz and am much happier with it than the previous Kohler stainless. I like the look and I like that it doesn’t scratch…or show water spots, which drove me nuts.

A white granite sink would blend in with the the countertop. I have my first one after years of stainless and I am very happy with it. Looks lovely and is easy yo keep clean.

An Elkay Quartz Luxe in Caviar (black) would look great with those tops. No Swan drop-in please.

I chose our white granite sink because I don't like stainless and couldn't find a white cast iron sink (what I really wanted) that fit our limited space. It was beautiful. Bit it chipped when a stoneware plate fell on it. After three years of careful use, it is horribly stained. It came with instructions not to use any kind of abrasive, even soft scrub. Instead, It's supposed to be cleaned with dish soap and bleached once a month. I am super careful to rinse it every time I pour coffee, tomato sauce, anything down the drain. I guess a black one won't have the staining problem. But the term "granite" is a joke.

It has been reported frequently on this forum that the white and cream granite composite sinks behave differently than the darker colors. The white and cream colors stain easily, The black, brown and gray shades do not and are easy-care.

I really don't like stainless sinks because they scuff so easily. I have had two Swanstone sinks in the past (overmount over laminate counters, though :/) and really liked both sinks. One was a cream color and the other was black. I would've liked them better if they had been single bowl but that's another topic.

I haven't researched sinks lately but when we did our house remodel in 2013, Blanco silgranit sinks were very popular and they have several shades to choose from:

Stainless all the way, and you’re comparing a work station to a regular sink. You’ll get much more out of the workstation.

I don't understand the concerns about scuffing a stainless sink. (a) have never had anything in one that looks like an injury, in decades. (b) they can (very) gradually get a sort of fine brushed look overall, which is just as fine as the original look.

Which is somewhat of an opinion. I had a SS farmhouse sink at my last house and I couldn't stand in front of it with any type of belt on because the SS would get scratched terribly. Of course, that IS referring to an apron front sink and not a regular undermount or topmount, but I have a large single bowl SS now. It'll probably go into the pantry when we do our remodeling but my SIL's Kohler white cast iron sink looks flawless 3+ years later. My SS definitely doesn't. One must be fine with that. Some of us obviously are fine with it and and some aren't. To each his own, though. I just know I'll have the Kohler sink after we remodel.
