What's Cooking In Your Kitchen Today?

The only thing I have cooking right now are my potatoes for potato soup. I will share with my youngest daughter when she brings some groceries after while. I may make an apple crisp later on and I am not sure what else this weekend. What is cooking in your kitchen?

    Nothing much; were out of town this weekend. I can tell you that were going out for Indian food for dinner tonight. Tomorrow I'm planning to have chicken and waffles and a bloody mary for breakfast at a little dive bar that makes the best food. Hubby is going to have eggs benedict. Sunday, we'll be at yet another dive joint where I am going to have the best ever chicken fried steak and hash browns. Can't wait for that one!

    It is wet and damp here in the PNW, so I think I will make a nice pot of soup. Not sure what kind tho, but must be lots of stuff in the freezer to make something good.

    I am making a pot of cabbage soup using savoy cabbage, onions, garlic, celery, potatoes, tomatoes and a handful of sprouted beans. Smells wonderful!

    I dug out some frozen spaghetti sauce from the freezer & put it in the crock pot. I need to start eating from my freezer! I'd like to try pickle soup next week.

    I am making my favorite oatmeal raisin cookies today. And probably beef stroganoff for dinner (since I got out the thin sliced beef to thaw :-)).

    Yesterday, I attempted the recipe for the fast no-knead bread posted about in another thread. I am not a bread maker and have never had much luck. Whoa!! It turned out perfectly!! I was hugely pleased and quite taken by the fact that it was so easy for such a nice, crusty and properly textural loaf. Will do that again soon!

    This morning I made ham and cheese scrambled eggs. Tonight my husband is hoping that we have steak for dinner. I need to take one out of the freezer soon for his wish to come true.

    I just had my dinner tonight, fried cat fish, mac/cheese, and buttered corn. I'm like my Mom, I don't like two of the same colors on a plate, lol, but I already had the can of corn opened. Nothing wrong as far as the taste, but green beans would have looked nicer.

    I'm craving a piece of chocolate cake with ice cream, but we have no bakeries to speak of around here and I'm too lazy to make one from scratch. Maybe one day next week I'll buy some Hershey's cocoa. I have a new Cuisinart toaster oven that claims you can bake cake layers in, so I may give that a try. Except you can only fit one cake tin at a time.

    I'm having chicken and wild rice leftovers tonight, but tomorrow I'm doing beef stew in my crockpot. I bought a peach pie at Kroger this afternoon and had a piece. It was surprisingly delicious.

    Today I made 15 egg-sausage-cheese on a biscuit, then froze them. Tonight, Screamin Sicilian pizza(it was BOGO).

    The other day I made an appetizer when I had guests- Kabocha Squash and Cannellini bean hummus. It had some interesting spices, including sumac, paprika and cumin, with a bit of cayenne for a little heat and lemon. I didn't want to eat it on crackers all week, so tonight I added some chicken broth and made soup. The pureed beans made it really silky smooth and yet hearty. Delicious!

    Marilyn_Sue - Tonight I made your meatloaf recipe and "roasted" it surrounded with potatoes and carrots. And then made a gravy with the drippings. Sooo good. My DH appreciated it.:)

    I don't really like dry meatloaf with mashed potatoes but your recipe with the rolled oats and done up "roasted" was perfect. Thank-you. It will go into my basket of recipes and into my meal rotation.

    No cooking for today, but yesterday I made bacon, lettuce, and tomato on toast sandwiches for a meal. We had not had any of these for along while and those very tasty.

    I made veggie quesadillas for dinner and a large pot of the old weight watchers zero points vegetable soup! I froze several containers of the soup for meals later this week.

    bifenton, I am glad you enjoyed it. You can add different things such as Worcestershire sauce and just do slices of bacon on top too. You can add diced zucchini to the mix also if you should have it.

    Today I will be fixing myself a T bone steak, some fried potatoes, green beans and coleslaw. Tomorrow will be pork chops, sweet potato, more of the green beans and probably apple something too.

    Shrimp fried rice. Yum! I try to overload it with veggies to keep from overloading it with rice. I love rice, but I pack on the pounds.


    I'm also going to make sweet potato casserole today. But that is for my work group Thanksgiving potluck on Wednesday. I won't eat it because it's carb filled, but they like it.



    I guess I should stick to proteins, veggies, and some fruit by next week, but I won't.

    Doing a boiled dinner with veggies and smoked shoulder, I use a pressure cooker. We love it.

    Rob, just do the best you can and don't beat yourself up when you eat something you later wish you hadn't. It's especially difficult this time of year because of all the extra holiday goodies. We're on vacation this week, and despite my best intentions, I'm eating more than if I were at home. Next week, I'll get back with the program, but I am looking forward to the first of the year when there won't be so much temptation.

    Butternut squash soup for lunch and baked chicken, roasted baby red potatoes and peas for dinner plus I made a Birthday cake for my sons birthday. He is turning 50 and is coming over tomorrow for his Birthday dinner!

    We went out for dinner today but I prepped Thai Chicken for the slow cooker tomorrow. Also will make rice to go with it.

    Today's dinner was delicious - it is listed as an appetizer, but is substantial enough for a meal. It was three charbroiled chicken skewers drizzled with peanut sauce, on a bed of coconut rice. Shredded carrots and watercress on top.

    I made a nice little beef roast with potatoes and mushrooms. It turned out great and delicious gravy and rice to go with it. Just have to have my rice and gravy!

    in-house made smoked gouda/pecan spread. Goodness that sounds SO delicious!! Definitely worth it! Hope you feel better soon.

    Outrageous price to deliver? Worth every single penny to me today!!!

    $10 seems normal to me, at least in my area. When I order food, it's typically around $5 for delivery and I tip another $5. I love the convenience.

    Anglo, I would have paid $10 in a heartbeat to have that delivered! That sounds delicious and hope it made you feel better!! And it reminds me that I haven't fixed short ribs in ages.......braised short ribs with creamy polenta is one of my favorite cold weather meals :-)

    The other day after many hours at chores, I really wanted a restaurant cheeseburger - - with fries. I had coupons for Wendy's and Steak & Shake (plus we have quite a few "burger joints" both chain and local close by). I checked out the websites wondering which to go with but after seeing the calorie counts, I just couldn't.

    So I pulled a quarter pound of lean hamburger out of the freezer and cooked it with a bit of onion, and nuked a small yellow potato then made a burger/potato bowl with dill pickle, mustard, and catsup. It was good and satisfied my craving!

    Today I am making a big pot of chicken and pureed vegetable soup. Trying to use up more of the freezer foods, too.

    I made simple stuff yesterday. Japanese eggplant quartered lengthwise with garlic powder and olive oil baked in the oven to perfection. Sweet potato sliced thin baked in salsa and extra garlic. Both are delicious. I also cooked up carrots sliced into rounds. Today I will pair them with some chicken in spices. Since the sweet potatoes are in salsa I might go with a Mexican flavour for the chicken.

    I finally started my Thanksgiving cooking that I meant to start 2 weeks ago! This year I'm experimenting with freezing and seeing how things turn out. My family isn't picky so I know they won't mind.

    So far I made a giant batch of caramelized onion cognac gravy, and I just finished my stuffing. It's a mix of cornbread, ciabatta and french bread, and normally I make an unsweetened corn bread but this year I tried a sweetened one and I don't like it as much. I don't think anyone will mind though. They may even like it as it adds a slightly sweet note to all the savory vegetables and herbs. It's cooling now and will be packed into freezer bags. I also prepped and froze all my onions, celery and herbs all chopped and ready to go. I removed all my corn on the cob (16 ears!) and froze it for my corn casserole and picked through 3 lbs of spinach (3 pounds of spinach is a LOT!) and froze for my baked spinach dish. I think this is going to save so much time and stress for me so I can actually relax on Thanksgiving since I make enough for an army and can't seem to stop. :)

    I have a second stuffing that I'm trying this year that was posted a few weeks back in the vegetarian stuffing thread so I'll make that later this week. Then I think I'll be done until the week of.

    Today I finally got around to cooking my quince - I make membrillo or what the British call quince cheese ( and it is so good with cheese!) It has finally turned pink, but it still needs to cook down and thicken more, and darken to that lovely almost-red.

    We are home from our trip and after many days of eating delicious, but not particularly healthy restaurant food, I am ready to get back to sensible eating. Tonight, I am going to sear some scallops which will be served with steamed asparagus and garlic/dill noodles. My serving will be heavy on the scallops/asparagus and light on the noodles.
