Madonna, I use 12 ounce jars sometimes, seldom use pints because we can't use that much up before it goes bad.

I don't see any reason that the Apple Pie Jam couldn't be canned in pints, though. Like you, I've checked with NCHFP and they give times for both 8 ounce and pints. Jam is one of the safest things you can make, so I wouldn't hesitate to can it in pints.

In addition, it's similar to apple pie filling, both in ingredients and in density, and the NCHFP says that can be processed in pints or quarts, so it gives me another reason to be OK with it.

Thank you, Annie. I thought II could safely go a little larger jar size, but rather be safe than sorry. I quit my job and now have time to can again. Not in the large amounts you do, though, since there is just me. I'm doing preserves right now to gift at Christmas. Apple Pie Jam was my DH's favorite, but I'm doing some of the recipes with hot peppers and some others I've not tried before.

Still have my chickens and two Pekin ducks, not for meat, but for eggs and laughter. Looking for a little snow this weekend. Hope you don't get much if any.

You quit your job? But what will they do for cake and other baked goodies? Still, I'm glad for you, at least you have time to can again.

We haven't gotten any snow and aren't supposed to, so that's good. I also think chickens and ducks are entertaining, they have such different personalities and are just fun to watch. I still have one bossy old Speckled Sussex, she's 7 years old now and she rules the roost with an iron claw, LOL. She's the total boss of all those young laying hens I have, and will not stand for any nonsense from any of the young birds, it's hysterical to watch her puff up and assert her seniority.
