Freezing veggies now for canning later?

Hi. I realize some veggies can be frozen when the peak of harvest is overwhelming and used in canning recipes later. Tomatoes, tomatillos, chopped peppers, chopped onions, corn for sure. Is there a list somewhere that gives recommendations for or against which can or should not be frozen?


From my personal experience, I assume summer squash, zucchini, okra, cannot unless the end product is a smooth blended sauce because they lose their integrity and become soft. Cucumbers and green beans as well. Maybe potatoes.


What about eggplant? Summer/Southern/crowder peas? Others?
