I've frozen Southern peas before and then canned them later but they don't taste near as good as fresh canned peas.

I've canned frozen shelled beans, and they were OK, I can't compare them to freshly shelled as I never can those, I only freeze them. Diced or shredded zucchini or sliced okra can be frozen and added to stewed tomatoes but be sure to process them in a pressure canner. Frozen onions can be added to salsa along with the frozen tomatoes. I've never been able to do anything with cucumbers after they are frozen, they don't freeze well.

I do freeze fruit to make jams and syrups during the winter, being in a time crunch during the summer/fall when the garden and fruit trees are bearing heavily.
