Please, I had butcher block counters in this house they are now 17 yrs old still look awesome no sealing neccessary with good oiling and wood has an enzyme that kills bacteria if you do not seal it. I ran a catering biz from that kitchen so the counter was not babied at all. The only comment I have about your plan is the black cabinets they IMO are not a good choice You also should get new lighting before choosing anything else.

Get a master plan in place - with a budget - that ceiling will need to be addressed. There is a proper order to doing a renovation and sometimes people get fixated on the finishes when the bones need to be fixed first.

You need to have the new kitchen designed from the floor up to the ceiling and lighting before you make your counter and materials choices. You probably won’t end up with such a long long peninsula. If you don’t have a Houzz ideabook for kitchens already, start one. If you have one, go through it a compile a new ideabook based on this kitchen’s size and shape. It will help your designer come up with a plan that will be to your style and taste.
You will have electrical, plumbing and lighting decisions to go with the new layout and materials, too.
Don’t rush into a redo. Plan, plan and plan again. I do not chop directly on my butcher block-topped island nor on my granite perimeter counters. I use cutting boards and plastic cutting sheets. The butcher block gets oiled with edible mineral oil monthly.

From what I can see, you do not *NEED* a new kitchen. You would *like* a new kitchen, but there are many other places your money could go at this time. So yes, plan what your new kitchen should look like, but make sure you have a piggy bank for when the furnace dies, or the roof starts leaking, or any other issue that may surprise you.

Before we redid our kitchen, we did NEED a new one. The wall oven ate heating elements, the cabinets rained particle board onto the dishes, the single overhead fluorescent was much better at providing shadows than light, the dishwasher was near the end of its life, and I absolutely hated the Corning solid surface cooktop with a passion. The refrigerator boxed in a corner we called the Black Hole since it was too dark to see anything put there. Notice I haven't mentioned the color or finish of anything. Those are just the icing on the cake, and a little food coloring can change everything.

No, it is not worth it. Right now, you have the exact inverse of what you want: you have black countertops and light wood cabinets while you'd prefer to have wood countertops and black cabinets, so you already have both colors you want.

Yes, do add a new kitchen to your wish list.

In the meantime, you can polish up the current countertops with Jubilee Kitchen Wax or Gel-Gloss if they are in pretty good condition.
