Can you draw a floor plan with the measurements?

I wouldn't do anything until you've lived in the house for at least 6 months. That might then dictate to you exactly how you want to "fix" this issue.

I don't think that replacing the pedestal sink with a vanity is a good idea, because I think that a quirky room with walls that aren't all at right angles is not helped by the addition of right-angle furniture that would call attention to the other angles. Your pedestal sink has a nice go-with-the flow curve.

However, any bathroom, even a powder room, needs at least a little storage space. So, if the neighboring rooms are in a traditional style, I would consider a demilune (half-moon) cabinet, or any cabinet with a curved front, for the other wall, where it would be viewed well from the toilet.

Can you include the measurements of each wall when you draw the floor plan? I agree with cpartist to wait a few months before you do anything but I may have an idea that you could think about during the next few months.
