HELP! my countertop is too short

Cut my butcherblock countertop but had a fight with my saw, and the saw won! Now my countertop is about 1/4" smaller than it should be on the side (see pics). I had planned on tiling the back wall as a backsplash anyway, do I just bring that all the way around to hide my ugly seam? Any other suggestions? Thanks for your help!
Edited to add: there is a farmhouse sink underneath. I have not cut that out of the countertop yet but it goes 33 of the 36" width so in the end there wont be much counter on either side of the sink

Cut out your sink please and drill for your faucet hole, pulling it as far forward as possible. Center the faucet hole in a power miter box saw and cut through it. Cut a matching piece that compensates for the saw kerf and the missing 1/4", glue it in place, and sand to flush. That far back and covered by the faucet escutcheon, the faucet itself, and the backsplash tile, you'll hardly be able to see the patch.

Tiling around the side is an option, but a butcher block countertop will expand and contract with moisture and weather, so having some space isn't a terrible thing. If you caulk the area well with silicone, it might be OK.

Do you intend to stain, or clear coat the counter? Given the tight space, you might want to remove, and treat it elsewhere before installing it permanently. Then, perhaps, put a small bead of clear silicone in the gap.

Backsplash on the back wall, only. Tiling side walls never looks good.

yes to both. I will stain and waterproof (as well as cut the area for the sink) before I permanently install.

Center it so that there is a smaller gap on each side, then caulk.
