Probably bruised the leaves when washing/drying or when putting the rubber bands on.

I let the sun dry all my herbs. I just pick a variety and lay it in a single layer in one of those disposable foil pans with a rock wrapped in foil to anchor the pan against the wind. Takes about 3 days and I bring the pan inside at night in case there is fog or dew. Free solar dryer. Works great! When the herbs are brittle as I rub through my fingers, they are done. This is a pile of dill I just did.
