I’d try to match the lightest predominant color in your countertop. It won’t be bland. The herringbone pattern will add interest. Do a sample board with grout before picking a grout color. You’ll still see the herringbone pattern with a grout color that isn’t much darker than the tile.

It’s so hard to tell online but it looks like the lightest tile (Mist?) may work. In my opinion, the darker tiles would look dreary with your cabinetry.

I like the middle one . I think the darker one might be too dark with the cabinets . Light will bounce off the lighter one.
You would use a dark grout with the darker tile.
It would not shine as much .

I think if you switched out your hardware to something in nickel, the tile would look better. right now you have those dark handles and they don't go w/anything.

Your second picture (the lightest one) Mist is the best. Grays don't really work well with the warm toned cabinets you have.

The lightest large tile is my vote (third from right and second from left). The tile has a lot of texture in it and adds a lot of interest as is. A herringbone is nice but maybe not necessary. Have you laid them out in that pattern on the wall? You may find with such long tiles it looks less like a herringbone and more like a giant zig zag.
