Stumped by stairs

Hi. I am looking for a little advice. We have a staircase that we need to remodel. We must take the carpet out, however, from the photos, you will see that the area where the carpet is currently is cut into the stair tread. We are replacing the floors throughout the house with a lighter engineered wood. We thought we would do the stairs as well, and take off the banister and the spindles and then put them back, but the engineered woods don't offer enough pieces to then fit into the cuts already made for the current stairs in the wood paneling of the wall. We must remove the carpet because of cats and dust allergies.

My husband thought about painting the existing brown wood edge and spindles white, and laying down the lighter wood in the area where the carpet is, but I think the new flooring offers only a simple stair nose and not the extra moulding the current stairs have under that edge. Ugh. Would greatly appreciate ideas! Thanks so much.
