I think you answered you own question. You want a coffee station, and having 3 stools is not necessary for your family's needs. And, no, I won't look weird. You, and your guests, and future buyers will be admiring your smartly placed coffee station, not thinking "Where's the 3rd stool?" Not everything has to be in sets of 3 or 5. If you forgo your desired coffee station, every time you look at that 3rd stool, you'll be mad.

That looks fine with 2. This is your home and you can decide what you want. You often use the dining table for breakfast/lunch with your family member. So it is unnecessary for you to keep the 3rd one in your kitchen. Sure you can add the ideal coffee station.

I have 4 at the peninsula, tucked under, but they are not visible from any of the living areas. We never use them. Before I redesigned the kitchen there were even more stools at the end of the peninsula and end of the island. I got rid of those overhangs when we remodeled as I didn't want to see stools from the family room.

I am playing around with a potential future kitchen and have no stools in the layout. There will be a large kitchen table a few feet away that seats 6, plus a dining room table, so I would rather have more drawers than rarely used stools.

Martin, I'm curious what you decided? Also could I ask for pictures or drawings of your kitchen layout? I'm trying to decide whether to do away completely or not. But a big factor in our decisions are also how much space do you have to walk around the peninsula (maybe distance from end of peninsula to perpendicular wall, pantry or cabinets?). Thanks!
