Another “Help with my backsplash” question, with bonus light question!

We are working on the final details of our kitchen/servery. When this was originally designed, we were looking at a white lantern tile OR a white fireclay, now I’m considering a white picket or subway with a dark charcoal grout....Is that classic or boring lol?

Some extra details: Above the stove I have set aside a large beveled square of the island stone, to be placed in the center as the accent, so that needs to be considered with the tile choice.

As to the lights, I have no idea what to do lol...I can’t move them, I have to live with the location, so what would look nice, and be bright enough to light the space?

Any part of the backsplash that is currently blue will be tile: Behind the sink, above the sink window, and in the breakfast banquet area. The servery is the last photo, and only needs to reflect the main kitchen space.
