Help canning soup please

I have an abundance of potatoes, onions, bagged baby carrots, and celery right now. I need to preserve them before they all go bad, I am running out of storage room. I would like to incorporate them into a soup rather than canning vegetables only.

BBB Chicken Soup and Beef Stew with Vegetables look like good choices to use these vegetables.

I have chicken, but no beef stew meat right now.

The Chicken Soup recipe does not have potatoes in it. Can I use the vegetable ratios from Beef Stew, but can it with chicken and chicken broth Instead?

Keeping to the “half solids and half liquid“ ratio from NCHFP would be appropriate here?

I appreciate the advice!
