Questionable grout fix proposed by tile installer...

I just had a new tile backsplash installed a couple of days ago and the gray grout has dried very inconsistently in color and it’s extremely noticeable. The installer told me to buy some more grout and he’d add a second layer on top of the existing grout. From what I’ve read, it sounds like it could flake off in the future - am I better off telling him no thanks and just trying to do a color enhancing grout sealer myself, which is what the manufacturer (Laticrete) recommmends? If so, would I have to basically just paint the light areas with the sealer extremely carefully to try to match the darker areas? Or does anyone have any other suggestions on what to do to get more even color? I’m using Laticrete Permacolor Select sanded grout in Smoke Grey, 1/8 inch joint width.
