Fall cover cropping in raised beds??

Putting my raised beds to bed, and wondering if there's anything else I can plant there for overwinter? Zone 6. I have the beds under a domed plastic cover for now. I use them mostly for tomatoes during peak growing season. Also wondering about digging anything in? I've never planted a cover crop in a vegetable garden but it sure would be good for weed control. I don't have a good composting situation yet, but could use ground up leaves for cover.
