You cannot avoid the pink, unless you bleach first. Bleach will make it very white. Another option is to stain white, then apply natural seal or nordic seal to prevent tannins, then your water base poly of choice. It will give you a different look, so test to make sure you like the end result. With red oak you will need to accept the pink or make it very white.
