If you do a web search for pages on the topic of pruning and training peach trees you should be able to find pictures showing what to do. This should be a lot easier to use than somebody here trying to describe involved details, without supporting images (although of course some will know how to draw on your photos or provide other visuals. But that happening depends on such a party popping up and doing so. And may often not be really as good as what is shown on dedicated web pages).

what is that board or stake for? .. if it is a stake.. i wouood probably prune to not need that ... it probably means that branch is not structurally intact .... ergo ... remove it ... or at least deal with it ...

what is your goal for this tree ... fruit production or a pretty tree ... answering that.. defines your goals ... which you can then implement ...

Before you start trimming you might consider pulling branches down. You don't need to tie them down just check out the possibilities. Any branches that you can save like that is always a plus. My guess looking at your trees is that there are only a few branches that need trimmed on each tree.

I've been tying off branches to the deer fence around them but now my Bartlett pear branches are lifting the fence up off the ground. You could tie off to bricks, blocks or stakes. By next spring the branches will have taken much of the set and you can remove the impediments to mowing.

They're saying that if you do a lot of trimming when the tree is dormant that you force the tree to produce vegetative growth ( watersprouts ) instead of fruit. They're also saying that you're better off trimming in the summer after a few inches of growth.

the stake at the tree was used to support one of the branches during summer, lots of fruit, didint want that branch to break. the goal for the tree is fruit production, it is hit or miss here though, as this tree tends to flower pretty early and we often get late frosts. will check the links

as far as pulling the branches, the tree in reality is much bigger than it looks on the pictures, probably be quite difficult.
