You can harvest portions of the rhizome mass such that stalks remain attached to other portions. But why? The stalks are going to die, without your touching them.

If your question instead is meant to ask how to have ginger grow anew next season, then just plant bits of rhizome.

Can I plant the bits of rhizome right away, or would I have to wait until spring? I don't have much luck storing ginger or turmeric rhizomes inside - they shrivel up or they mold, whether I store them in the frig or not.

I just dig and cut or break off what I need. I believe you're supposed to wait until it goes dormant - meaning the stalks/foliage die back - which is around this time of year. I never dig up an entire root, but leave the rest to keep growing.

I am in SW Ga and grew turmeric this year, All in containers and decided to dig them up and leave the soil intact. Placed the in a couple cardboard boxes and put them in the greenhouse but not to be watered. That was right before frost and they look great. I can pull from them anytime and still should be able to plant them when frost is over.

I wonder though if you would need to dig it up in your zone, does it freeze there? Is it a mild freeze only lasting a short time, and if so I'd put some heavy mulch on the rhizomes for protection. What are others in your zone doing with it, if there is someone.

My zone was recently changed from 9B to 10A. We seldom get a freeze. I've been leaving my rhizomes in the ground year round, under mulch. The stalks die back in winter, but so far have regrown when hot weather returns. Still, the plant hasn't grown large enough that I am comfortable digging up any rhizomes for cooking.

You should just harvest whatever you need. I almost never get the entire rhizome and it will eventually start growing again when it heats up again. The plants will inevitably die back and you're very unlikely to take every bit of the plant such that none grows again next season, there's probably a lot more under the soil than you think or will harvest.
