This is the kitchen currently. The backslash that is there is actually just wallpaper I put up temporarily.

Lots of movement in your counters and flooring. I’d go for something simple. Pull a light color out of your countertops (hopefully it’s a color that’s also in the flooring) and go with that.

I found some tile patterns that reminded me of the pattern in the wallpaper you have currently. I assume you like that pattern and it sounds like you aren't looking for the safe choice.

Most of these are from Tilebar and come in many colours so you can find one that will work with your room, not necessarily the colour I'm posting, just the style of tile.

This one appears to be a raised pattern. Different without screaming at you.

Seashell or fish scale pattern. I'd use a slightly contrasting grout to emphasize the pattern a little bit. It is a bit too plain with it all one colour. If you're going to use a pretty pattern in the layout, you want to see it IMO.
