Kitchen cupboard height

Building our retirement home in British Columbia, Canada and have very inexpensive mission style doors that I am painting ( from Habitat for Humanity). My husband is building the actual cupboards. The main floor is open design and the kitchen is approximately 10 ft. wide and 15 ft long. The ceilings are only 8 ft high. My delima is should we have upper cabinets extended to the ceiling or leave space above them if so how much space (inches)?
Suggestions please.

I would take the cabinets to the ceiling. A small amount of space at the top is such a dust catcher. Much cleaner look to take them to the ceiling - particularly since ceilings are 8'.
