On that bar top we used a WaterLox finish. It does slightly "warm" the color of the wood. We currently use and have been using a spray on finish called Conversion Varnish that is also water & stain resistant and only requires a soap and water clean up. We find it to be just a durable, does not "yellow" and the dry time is a lot less between coats.
