Wood species/kitchen cabinets

I am doing a kitchen project and would like some advice re wood species. (I will add a photo of the style I am going for). I originally was looking at Walnut for the uppers, or some other wood species that has some grain/variation (but not too much and not the "stripy" effect). What I am being told is that walnut as it ages becomes red unless it is stained a really dark color. I want a medium wood tone. Perhaps birch would be a better option?

IMO walnut is awesome and I honestly have used it for years for flooring left natural and not had an issue with yellowing . IMO a lot depends on the finish . I love walnut combined with high gloss white cabinets .

Thanks for the input Patricia. What I am being told is it turns red....like cherry. I have seen cabinets in the showroom that are definitely red. So, what do you mean it depends on the finish?

No experience with walnut... but, my cabs are birch, 5+ years old. Medium stain. Lots of graining, but no striping. Love them!

Yes to following darbuka’s lead and going with birch.

We see it five years in, looking great.
