You have not enough info.

Post your kitchen plan. Not the pretty elevated one, the one with the cabinet and appliance inches.

A five foot island can be a single linear fixture, or two pendant, or three small. Two looks better than three and a linear at no more than 36 inch width is nice., On two pendant, neither should exceed a 12 inch WIDTH, less if a solid shade.

Your total height of the fixture, Can't be more than:

96 inches minus the total of counter and "air" , or 72 inches. Leaving you and that fixture with a maximum total fixture height ( including the mounting........) of 24 inches. You want 36 from bottom of mounted fixture to counter top. You can cheat an inch or two perhaps, but 36 is pretty perfect.

Nobody can help you with what pendant, which finish or anything else unless you fill in the blanks. What style, what are your finishes on other materials, and...the cabinet plan.

Cabinets are Shiloh- Arctic White Shaker with beaded inset.

Counter top is probably LGHausys in Minuet with a brushed finish

Hardware- although I have lots of samples- probably Lew's Hardware bar series in brushed brass

Sink Kohler Whitehaven tall apron sink divided-white

Faucet- Rohl 3 leg bridge country faucet in polished nickel

all appliances are stainless steel

IMO it depends on your style for sure. It sounds like traditional is what you are leaning toward with the cabinets but really that is a huge island and needs pendants that are to scale with that .Your kitchen will require roller skaets to prepare a meal with those huge walkways . I always tell my clients to pretend they are making a simple pasta and sald dinner , see how many steps you take to do that meal. Large is not better for kitchens often and the size of island is also IMO too big. Who is desigmnig this space ? An actual indepedant KD was wht you needed and not a cabinet salesperson. That island will require you to walk all around it to clean it , not something I would want to do. Mine is 54” wide and I am tall and can barely reach to clean it from one side. 128” is a lot of space so maybe post some pics of pendants you like with their sizes and we can help more.

Stainless, polished nickel, brushed brass. Keep the HARDWARE and Lighting to polished nickel.

Brushed brass and polished nickel ? No.....not great companions.

Or: Change the faucet to a soft brass, or stainless and limit your finishes to two: Stainless and brushed/warm brass. There' enough confusion in a kitchen, Edit, please. : )

That editing will drive your lighting finish.

I don't have an issue with island size 5 x 10 is very common- everyone wants the seating and IF sink is on the island? The five feet depth is nicer. However.....53 inches of path between cook and island is over kill.- 45 is plenty and then some. Get the island DOWN to ten if quartz is your desire.
