Floating Wall tile, how much is too much?

Completing bathroom remodel with 4x4 ceramic wall tile in a 1/2” offset. My home is 100+ years old and no walls are straight. The tiles were floated away from the wall between .25 and 1” in some areas. Contractor said this was done to square up the walls and to maintain an even subway pattern around parameter of room. I inspected the site during the process and install included proper cement board and waterproofing in shower area. The mortar appeared to be buttered evenly across the tiles/wall so there weren’t any gaps. The contractor didn’t rush through the job, he took time and seemed to take great care.

It feels like a quality install but how much is too much when floating tiles away from a wall?

Floating tiles also leaves more variation in the grout lines than I was hoping for.

Am I being too particular? Do I start over and forego the wainscot? Other suggestions welcome
