I am assuming you are using Eldorado stone. Both are heavy chunky rough cut and Casa Blanca is more uniform in colour and Loire Valley is nice colour mix in the same stone. Are you using Loire Valley for random inserts because it is varied in colour on each stone? That will look very French Country . I feel since it is rough cut I would not do a schmere look as I think it would be too much grout. A moderate over-grout that bleeds over the stone edges is more French Country and definitely not a recessed grout for the French country look.
