What colour do YOU want in your kitchen? That is the colour to paint the tiles. If you enjoy tedious work select three different colours to cover the three different colours in the brown.

If you want to just cover it in a white--using a matte would mean you don't have to match exactly.

Using white that doesn't quite match the white of the other tiles might not look right. I'd either leave them alone until you re-do everything, or try painting them a light taupe color taken from your cabinets. The cabinet color is fine - don't paint them.
