over-wintered leeks

Hello fellow gardeners,


I successfully overwintered leeks this past winter (Maine, zone 5) in 5-8" of straw. They survived and are starting to look greener and happier as the days get warmer and sunnier.


My questions are: 1. should I remove the straw matter that I mulched them in and compost around the base of the stems, and 2. should I trim back the leaves (blades)? Before the ground was frozen hard, I was harvesting a few now and then, and they were very tasty! I am looking forward to eating this season!
