In a similar situation with a sloped vaulted ceiling. Not sure this is your style but it’s one of the few I’ve seen that can has max height of 130”. Each light can be adjusted separately.

Perhaps a fixture in this style would fill the vertical space but not block a view of your artwork.

Based off the 71" table, anything stretching ~50 inches centered to it would look great. Also based off the ceiling height, anything that comes down ~8 ft. would fit the space well. In regards to the chandelier, pendants of any size really depending how many you are planning to do. Having said that, here are a few suggestions that may fit your dining room space well:
