Sauerkraut Canning

last modified: 5 years ago

I'm about to make a batch of sauerkraut. I just harvested about a dozen good sized heads of cabbage. I know the basic recipe is 3 tablespoons of canning salt to 5 lbs shredded cabbage. The way I usually do is salt down a big dishpan of shredded cabbage and let sit overnite. The next day , I'll pack it in qt jars. Put the lids on loosely and sit them down on a newspaper (or towel) covered tabletop and let it ferment for at least a week to 10 days. Then I empty out the jars in a big stockpot and heat it up some , re-wash the jars and lids , repack the jars and water bath can it for 20 minutes. Might keep a qt or two in the frig for fresh eating.

Has any body fermented sauerkraut in jars and canned it like this.?
