I grew Red Noodle last year, and leaves were dark green, they were not pale or purple, so yours don't look all that healthy. But is the newer growth still good?

Agree with @robert567. Chinese Red Noodle is one of my favorite yardlong beans, I grow it often... and healthy leaves should be dark green. Those look abnormal, and the plants themselves look much less vigorous than they should be. If there is an Extension office near you, it might be a good idea to take a few leaves in, to see if they can identify the problem.
