Leave the seeds on the scapes until they either shrink into nothing or form dark brown seeds. Once they are hard, brown seeds, they are mature and ready to do whatever with.

I don't have the tolerance these days to collect the seeds, dry them out, put them in envelopes labeled with parent plant, and save them in the refridge/freezer until time to plant. I just let them drop. Some come up, and if they do I transplant them when they are big enough to endure the transplant shock.

I have three types of hostas that produce viable seeds that actually produce babies reliably. One type is waaay more prolific than the other two. I have too many of those babies, so I now cut the scapes off before the seeds mature.

Every now and then a cultivar that never produces viable seeds does. A few years ago I found a new plant growing beneath the parent that surprised me since these never make seed. That baby is growing up and is one of my favorites because it was so unexpected.
