I had the same experience. But, when they did’t separate from the pits, we stopped trying for a few days. when we tried again, they came off much easier. So So, we decided they just were’t completey ripe.

I was a bit jealous when you said you were ripening Red Haven Peachs; those use to be my favorite canning peachs of all time. I don't remember them ever not being freestone.

Thanks docmom and CA Kate. They were extremely soft when I froze them, so I think if I'd waited another day, they would have been too soft. I did call the Farm market, but I'm not sure they cared. Anyhow......it's done, and at least they tasted really good.

CA Kate.....so when you canned them, they came off the pit easily? I'm pretty sure these were actually "Early Red Havens", which might explain things. I might call the Farm Market back and ask again if they knew exactly what they're selling. This place was sold to new owners a couple years ago, and it's just not what it used to be. But......it's all done now, thankfully. Now all I have to worry about is a power failure this winter, or if this old freezer will hold up. haha

Yes, I use to halve them and put them right in the quart jars. I can’t imagine trying to can many jars and not have that part be easy.

Hmmmm.....the plot thickens. I was getting the big box the "wrong" peaches came in, and the box says "From South Carolina". Okay.......they gave me the wrong info on the variety AND the state they came from. (told me they were from Michigan). I called them again and she said she'd tell the boss. I just think it's important to sell what you say you're selling. I have gone to this farm market for about 35 years, but it got sold a couple years ago. Guess things just change, which is unfortunate.
