If that is best you can do. Incredible does not convert sugars into starch as fast as older su varieties, but you will lose some over a 12- 16 hour period. You just need to determine if the loss of flavor is acceptable.

Sure you can but it won't be quite as sweet as if you did it straight away after picking. Store it in the fridge or a cooler overnight if you can and less of the sugar will turn to starch. Definitely don't store it outside in the heat after picking. SE varieties don't keep as well as the super sweets but one day should be fine.
