Not sure exactly what you’re after. Is there a preserve you've had and want to replicate? Jam and chutney are very different things. The tomato chutney I make doesn’t contain caramelized onions and doesn’t need to be canned. It will keep for years.

It’s high in acid and sugar. British recipes for jams and chutneys aren’t processed. Shrinkage is all that happens eventually.
