The walls or ceiling or floor is probably not 1000% even, which is normal.
And with this layout you will see it.
He probably cut all the top row of tile the exact same size (I think I agree with that)

It’s the tile. No two are exactly alike. White grout is the correct choice.

Did you purchase cheap tile? This is common to have unequal sizes with low quality tile. Your tilesetter may be able to remove a couple of these and install better fitting tiles.

To answer your question regarding grout, it will minimize this certainly but you will still see it since you already know there is a gap difference.

@top drawer - not cheap…not marble-expensive, but we bought it from Bedrosians and it was like $7.60 a square foot + a few hundred for shipping.

I know it’s the nature of this kind of tile to be a little uneven, but when we had it installed in our kitchen, the tile guy (a different one) made up distance between each of them, instead of with one or two, so it didn’t look obvious. If the white grout will hide it, then I’m not going to say anything. It is A LOT of tile to lay - I’d go cross eyed if I had to spend days looking at it.

Based on the overall - I would be happy. The general lines (both horizontal and vertical) look straight and the walls are likely not 100% square. White grout was a good choice for the tile variability. Keeping the lines straight on a tile that has this much variability is hard and I would say he did a good job. Note the consistent tile slice on the left and that means he probably had to make small adjustments left / right to make that happen and he did so while maintaining stright vertical lines.

Same with the same size pieces he used to end at the time and it's obvious that the ceiling isn't perfect.
