I have a TON of apples. I've eaten them fresh, made and frozen applesauce, made crisps, pies, etc. I'm out of freezer space, but I'll be able to keep several bags of them fresh in my fridge for this winter. They're really long keepers. I'd still like to find a good recipe to can something. I could make/can more applesauce. I thought of apple pie filling, but I always make my pies with fresh apples. Then I just remembered my mother's apple mincemeat, which sounds really good to me right now, but I don't have a recipe.
I found this recipe for Pear Mincemeat in my old Ball canning book. Do you think it would work well with apples? or how might you change it?
