Help! Need countertop advice!

We are doing an addition to our home and, in the process, losing the large window on the wall of the kitchen shown (with all the junk 😁). We are going to put cabinets on that wall now. Wanting to do tall, pantry cabinets on each side, with lowers, countertop and floating shelves in the middle.
I thought I had a piece of old countertop that I could use for the middle section, but turns out it's not deep enough.
Ideas for what I could do for this countertop space??

THat would be my choice or a solid color counter in a color from the rest of the counters IMO losing that window is mistake make it shorter so cabinets can go there but honestly natural light in a kitchen is a huge bonus can we see the rest of the kitchen as it is and with the new floor plan Since you do not seem to be removing this wall I would like to see what is planned.

Have you thought of butcher block?

Patricia, the garage is now going to be on the other side of the window, so no chance of keeping it. There are two other large windows in the family room on the same wall, just down to the right, plus we will be adding some lighting.

Traditional butcher block wouldn't be a good color for your space. If you use wood, maybe match your floors? Or a black granite - visit a granite yard to look for a remnant.

Why don't you design it to look more like a built-in buffet or storage space rather than just more kitchen cabinetry stuck on a different wall? Soapstone? White Corian? A rich, dark wood?

I think you can probably match that granite well enough if the counter isn't touching the old one.

You might be able to do a solid countertop color, or butcher block, as suggested above.
