To my knowledge there isn't a requirement about where gypsum board must be used. There aren't any fire rating issues per code in a single family residence either. I would ask your local building code official before doing anything though. The main issue you would run up against is energy performance. If you are removing gypsum board and insulation from exterior walls you will lose significant performance. There is also a significant loss in acoustic insulation as well.
