I agree, it looks like horseradish. You will have it there forever!

I will be digging/harvesting my HR in a few weeks. You must be in a different part of the world than I. My HR has pretty much died back for the year already. Not much greenery left. Yours looks like it has just started growing.

I wish I could get horseradish to grow for me. I wonder if it needs the winder's cold.

Thank you everyone. We had a chance to get out in the garden this morning and dug some up; it's horseradish! We are based in Australia so it's only just coming out of the colder months here (so you could be correct CA Kate z9). Thank you all for the helpful responses. I suppose now we just have to figure out what to make with it!

Look up prepared horseradish recipes and then use it on roast beef.

Jackie - How thick are the roots that you dug up?

I dig mine, wash, peel like a carrot, cut into ~1" pieces, grind it up in a little mini-prep food processor, wait about 5 minutes to add some heat, add a little vinegar, salt, and sugar and pulse it a bit more to mix it up. I freeze it in 4 oz. or half pint jars and use it for cocktail sauce, on roast beef, on sandwiches, etc.

I use something like this recipe. You want just enough vinegar so the top of the HR is covered in the jar but not too much.
