Replacing flooring with Waterfall Island

Some background first... We are having a home built but decided to replace the flooring after completion because we did not like the builder's flooring options. It is currently still under construction but we are running into an issue because the builder connected the kitchen island waterfall to the tile rather than having it go to the subfloor... our flooring contractor says they cant cut the tile around the waterfall and suggests we remove the waterfall before installing the flooring.

We are trying to figure out how to proceed. Is the flooring guy wrong that they can't cut the tile? If we remove the island waterfall before the floor goes in, will the waterfall be too short to reach the floor? Will the weight of it sink into the LVP we are having installed? Will we need to replace the whole waterfall section to go to the subfloor?
