No one else answered so I'll try. I make frozen zest from all the citrus. I also make candied peel from fresh... never frozen; but then I've never tried. I really don't know about making candied with anything but fresh, but am watching to see if there are other answers.

I could see refrigerating the peels for a short while.... some number of days, not weeks. :) Just going by what lemon peels are like after I've frozen extra wedges, I think you'd lose texture by freezing.

You can freeze peels for marmalade so I should think you could do so for candying. Since they're going to be boiled up in water and then syrup, which will soften them anyway, I don’t see that any change in texture from freezing matters.

IMPE, frozen citrus peels can get mushy when thawed, which is not ideal for candied peel.

I do store them in the fridge in a plastic container, and yes, they last days, maybe a week that way before going bad.

But why not try it and see? I've never tried candying frozen peels.
