Help re. Silestone Statuario edge and underside

Hi! I am looking to have a bathroom countertop done exactly like the pictures below, but I worry about marble staining and would like to use Silestone Eternal Statuario instead. The fabricator (in Brazil) tells me that the underside of the Silestone would show on the side, and that the edge would be white rather than veined if done in this style. Does that seem right to you? Does anyone have experience with ogee and similar traditional edges with the Silestone Eternal Statuario, and do you know if the underside can be polished so that the side of the countertop where this “bulge” will be does not look weird? Any help appreciated!!
