flat leaf and curly leaf parsley from the same plant

I may have posed this question many years ago, but I'm still perplexed. How is it that a single

parsley plant can produce BOTH flat (Italian) and curly (French) leaves? Seriously, no question that these stems are coming out of the same plant. I see this occasionally.

These are supposed to be two varieties of the same species. Petroselinum crispum neapolitanum and Petroselinum crispum. Do many plants come in multiple varieties?
