Backsplash height with range hood

We have 9' ceilings and our cabinets do not extend to the ceiling but the range hood does. We have classic white painted walls and a white herringbone backsplash pattern. We have an 18" (high) by 24" (wide) mural centered above the range below the hood. Our question is, do we stop our backsplash at the bottom of the range (note the range has a level bottom - image at right, not curved), or do we carry the backsplash to be parallel with the top of the cabinets. If we do the latter, the builder notes there will be a thin gap behind the remaining part of the range hood extending to the ceiling and has suggested he could come up with something creative to hide the gap. Because of the ceiling height we are unable to extend the cabinets to the top-they would be a much more expensive custom order.
