It's a biennial. The second year it flowers and goes to seed but the leaves are still good to use.

I let mine go to seed and now I have parsley come up every year. However, it comes up where it wants. 😄 The tiny flowers are pollinated by some tiny wasp and both are very benificial.

I have had parsley plants keep gong for several years but it’s rare and presumably something to do with growing conditions inhibiting blooming. Once it’s flowered it’s finished.

FWIW, I grow flat leaf parsley every year - often from saved seeds, and I try to nip off the flower bud stalks while they're still tiny and they are perfectly edible with no difference in taste from the leaves that I can discern, only sometimes maybe a bit fibrous. Once the stalks with flowers are fully formed, there are usually few lower leaves left on the plants.

It's funny about the biennial thing because some of mine start flowering in the first year - maybe it's just a Florida thing.

^^^ It is noted that in tropical or subtropical climates parsley will behave as an annual, flowering and setting seed in a single year. Most of Florida probably qualifies as a subtropical climate ;-))
