Could I get some roofing opinions please!!!

Our house is is from the 1800’s and we are slowly restoring. Interior I know exactly what I want, but I am stuck on exterior. We are getting a new roof and I really love the look of the buildings in my town - cedar roof, thin white wood siding. We will eventually redo siding, but now it’s just the roof and cedar is definitely not an option. What color would you do? Our contractor uses Owens Corning. I am stuck between Driftwood, Black Sable and Onyx black. For some reason I can’t love black because I just want cedar look🤦‍♀️. Pics of my home and local buildings for reference.
