Pictures would help, but with the caveat that colors look different on everyone's different monitors. The pros on here recommend holding off on choosing a backsplash tile until after cabinets and counters are installed, so you can consider everything in your space, with your lighting. (I'm not a pro, but I agree to hold off.)

Without seeing anything, I would worry about SW Alabaster next to a white tile.

No need to rush on a backsplash. I moved in 4 months ago and only finalized my backsplash a few weeks ago, received it last week and need to call my builder to schedule the tile installer to come back and finish the last tile installation. I did a custom build and my builder was flexible. If I had a builder that wasn't willing to do this, I would simply skip a backsplash for now and do it later on my own.
