How can you install Sconce lights on a LVL/header beam?

We are renovating the kitchen and replacing a smaller window with a 8' large window over the sink which will require a new header/lvl board(outside wall.) We do not want to notch/drill/cut into the new header for the wiring. We have 7.5 foot ceilings and there isn't much room for anything other than the new header beam. Are there ways to add hard wired sconce lights over our sink and pass inspection?

conduit. you will have to secure it to something but it would be exposed. I hope im understanding the question. can you not staple the romex to the beam?

Is the bottom of the beam lower than the ceiling? If it is, install track lighting on the side of the beam, using small size track lights...something along these lines: Track light

Fur out 3/4" for Romex, probably bad detail at flanking walls though if not continued. Or exposed raceway.

Although I'm not quite sure how you fit a beam for an 8' long window between 7.5' and 6.75' or your kitchen layout, but maybe, with such a low ceiling height maybe a typical sconce over the sink is not the right fixture. Maybe a recessed can (cans along the 8' window) would be better.
